Summer Holiday Snacks To make With The Kids

Six weeks of summer means a lot of snack requests. 

So, if you're looking for something a little different to make with the kids, we asked Certified Nutritional Therapist and author @wellnesswithclemmie to share some of her favourite recipes.

They're simple, hands-on and made with real ingredients. There's plenty for little hands to get involved with too, from mixing and rolling to sprinkling and, of course, taste testing.

Best of all? No baking required.

Here are four to try over the summer holidays.

Avocado Chocolate Mousse

Creamy, chocolatey and perfect for a hot summer’s day. Avocado gives this mousse its wonderfully smooth texture, while cocoa, vanilla and a little honey or maple syrup bring the sweetness.

Ingredients

  • 2 ripe avocados
  • 25g unsweetened cocoa powder
  • 4 tbsp honey or maple syrup, adjusted to taste
  • 60ml milk of choice
  • 1 tsp vanilla extract
  • pinch of salt
  • Optional toppings: fresh berries, chocolate chips or shavings, sprinkles

Method

  1. Cut the avocados in half, remove the stones and scoop the flesh into a bowl or food processor.
  2. Add the cocoa powder, honey or maple syrup, milk, vanilla extract and salt.
  3. Blend until beautifully smooth and creamy.
  4. Spoon into four small bowls or cups.
  5. Add your favourite toppings.
  6. Enjoy straight away or chill for 15–20 minutes first.

Make it fun: Put a few different toppings into little bowls and let everyone decorate their own mousse.

Birthday Cake Batter Balls

Soft, sweet and covered in sprinkles, these little bites turn snack-making into an activity in itself. Mixing, rolling and decorating are all jobs little hands can get stuck into.

Ingredients

  • 90g oats, ground into flour
  • 45g cream cheese
  • 2 tbsp honey
  • 20g Purition Macadamia & Vanilla
  • 1 tsp vanilla extract
  • Pinch of salt
  • Natural sprinkles

Method

  1. Blitz the oats in a blender until they resemble flour.
  2. In a bowl, mix the cream cheese and honey until smooth.
  3. Add the Purition, vanilla extract and salt.
  4. Mix in the oat flour until a firm dough forms.
  5. Roll into small balls.
  6. Roll each one in sprinkles.
  7. Chill for 30 minutes, then enjoy.

Purple Power Bars

There’s something about purple food that makes snack time more fun. Freeze-dried blueberries give these bars their bright berry colour, with oats, Greek yoghurt, honey and Purition making up the rest of the mix.

Ingredients

  • 90g oats, ground into flour
  • 30g Greek yoghurt
  • 3 tbsp honey
  • 20g Purition Wholefood Nutrition - Mixed Berry, Blueberry, Macadamia & Vanilla or Almond all work well
  • 15g freeze-drief blueberries
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Blitz the oats in a blender until they resemble flour.
  2. Crush or blitz the freeze-dried blueberries into a berry powder.
  3. Mix the Greek yoghurt and honey together in a bowl.
  4. Add the Purition, berry powder, vanilla extract and salt.
  5. Stir in the oat flour until you have a firm mixture.
  6. Press into a small lined tray and chill for 45 minutes.
  7. Slice into bars and enjoy.

Cinnamon Roll Bites

All the cosy flavour of cinnamon rolls, with no oven required. These little bites are easy to mix and roll, making them a good activity for a slower afternoon at home.

Ingredients

  • 90g oats, ground into flour
  • 45g cream cheese
  • 2 tbsp honey
  • 20g Purition Wholefood Nutrition - Macadamia & Vanilla works well
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra cinnamon for rolling
  • A little extra honey or cream cheese for drizzling, optional

Method

  1. Blitz the oats in a blender until they resemble flour.
  2. In a bowl, mix the cream cheese and honey until smooth.
  3. Add the Purition, cinnamon, vanilla extract and salt.
  4. Mix in the oat flour until a firm dough forms.
  5. Roll into small balls, then lightly roll in extra cinnamon.
  6. If you fancy, mix a little cream cheese with honey and drizzle over the top.
  7. Chill for 30 minutes before serving.
