Purition Banana Bread

There’s something special about a good banana bread. Comforting, simple and familiar. This one is made with real ingredients, ripe bananas, ground almonds and a generous scoop of Purition Banana, for a nourishing loaf that’s just sweet enough and full of goodness.

INGREDIENTS

  • 3 ripe bananas (about 300g peeled)
  • 2 large eggs
  • 60ml maple syrup or honey (We used Honey Heaven UK)
  • 60ml milk
  • 80g Purition Banana
  • 120g ground almonds
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • 1 tsp cinnamon (optional)
  • Pinch of salt
  • 40g roughly chopped nuts (optional)
  • 1 banana sliced lengthways for decoration (optional)

METHOD

  1. Preheat the oven to 180°C (160°C fan) and line a loaf tin
  2. Mash the bananas in a large bowl until smooth
  3. Whisk in the eggs, maple syrup and milk
  4. Stir in the Purition Banana until combined
  5. Add the ground almonds, baking powder, bicarbonate soda, cinnamon and salt. Mix gently
  6. Fold through nuts if using
  7. Spoon the mixture into the loaf tin and smooth the top
  8. Bake for 45-55 minutes, until golden and a skewer inserted into the centre comes out clean
  9. Leave to cool fully before slicing (this helps it set)
