Cauliflower mash

This is such a delicious recipe to have as an alternative to potato mash and a great way to get children to eat more veg!

INGREDIENTS

  • 1 head of cauliflower
  • 250ml of stock, vegetable or chicken
  • 1 or 2 garlic cloves

INSTRUCTIONS

  1. Boil cauliflower in stock until soft you may need a little more water depending on how much cauliflower you have but don’t add too much as you want to mash to have a good consistency.
  2. Crush the garlic cloves and add to the cauliflower when finished boiling. You can lightly fry the garlic first if you prefer then add to the cauliflower.
  3. Mash together and serve. Try adding some other spices or ingredients for example, chives or spring onion.
  4. Enjoy!
