The Daily Feed 🍽

Tomato & Garlic Baked Cod

Simple, spicy and flavourful - would work well with chicken or pork too!

What you'll need

Enough for however many you're feeding, I cook for 2.

Main ingredients

  • Cod or any white fish, 1 large piece or individual fillets

Fresh/ frozen

  • Tomato, 1 large sliced
  • Garlic, 1 clove
  • Cheese, handful for topping
  • Parsley, optional

Store cupboard

  • Tomato, 1 large sliced

  • Cayenne pepper, ¼-½ tsp
  • Salt & pepper

What to do

1. In a small bowl mix ½ tsp cayenne pepper, ½ tsp ground black pepper and ½ tsp salt. Use this to generously season the fish.

2. Slice the tomato, grate the garlic (or use a garlic press) and the cheese.

3. Layer the ingredients in an ovenproof dish or pan in this way; Add the seasoned fish first, then the sliced tomato, spread over the garlic and top with cheese.

4. Bake in the oven until cooked through. Mine was cooked in just under 20 mins at 180 fan. Garnish with chopped parsley and serve with a side or 2 of your favourite greens.

notes & tips

  • 63 degrees this is the temperature at which cod fillet is cooked. Insert a food thermometer into the thickest part of the fish, if it's at 63 degrees it's cooked and can be left to rest.
  • cheese i used gruyère but you could use cheddar or parmesan, or a combination.
  • heat cayenne gives this dish quite a kick, use less if you prefer a milder heat.
