Essentially tonight's meal inspo. is really simple. A burger, some delicious, fresh homemade crunchy slaw and a side of greens...
The measurements for the slaw make enough for about 4 generous sized portions - which is handy because it lasts for a few days in the fridge, and can be used for lunches or as an additional side to other meals.
What you'll need
A burger or 2 per person, a generous serving of crunchy slaw and greens.
Main ingredients
- Burgers
For the slaw
- Red cabbage, ¼ finely sliced
- White cabbage, ¼ finely sliced
- Carrot, 1 grated
- Onion, ¼ finely sliced
- Greek yoghurt, 3-4 spoon fulls
Store cupboard
- Dijon mustard
- Wine vinegar or lemon juice
- Salt & pepper
What to do
- While the burgers are cooking; prep the greens and the slaw.
- Finely slice a quarter of red cabbage, quarter white cabbage, quarter red onion, grate a carrot (a mandolin is really useful for this as it really speeds up the process). Add 3 or 4 spoons of Greek yoghurt, a tsp dijon mustard, a tsp or two of vinegar (I used apple cider) and some salt & pepper. Mix everything together and set aside. You could also add a small handful of coriander leaves too...
- Prepare your greens the way you like them. I popped the green beans in a pan with a dash of olive oil and a splash of water, added some salt and pepper and turned up the heat. Let the water evaporate and allow the beans to fry off and brown a little in the olive oil.
- All cooked and prepped? It's time to plate up!
Swaps
No burgers? Go for some nice grilled or baked pork sausages instead.
Making home made slaw is quick, easy and definitely worth it but swap for ready made if you don't have time! Same with the burgers, I used good quality shop bought.
