Ham & Squash
The combination of roasted squash and ham is just delicious...
Use gammon steaks instead of roasting a ham joint if you're cooking for just 1 or 2, or don't have as much time.
Served up with some roasted garlic broccoli and cauliflower...
What you'll need
Enough for however many you're feeding, I cook for 2.
Main ingredients
- Gammon/ ham
- Butternut squash
Fresh/ frozen
- Broccoli
- Cauliflower
Store cupboard
- Chilli flakes, optional
- Olive oil
- Salt & pepper
What to do
1. Cook the gammon to your liking, I usually cook a small joint (180 fan, about 30-40mins) but you could pan fry or grill some gammon steaks instead.
2. Slice the squash lengthways and remove the seeds. Cook on the middle shelf with a drizzle of olive oil, salt & pepper and a sprinkling of chilli flakes until nice and soft, takes about 30 minutes, 180 fan.
3. When they're both cooked it's time to plate up - serve with a side or 2 of your favourite greens...
Prepare the squash for roasting
notes & tips
- 68-70 degrees this is the temperature at which gammon is cooked. Insert a food thermometer into the middle of the meat. If it's between 68-70 degrees, it can come off the heat and left to rest.
- top with a fried egg for an even more classic combination; ham and eggs... optional of course!
