The Daily Feed 🍽

Creamy Cod

Quite possibly one of my favourite fish dishes, equally as tasty and enjoyable as a fish pie...

What you'll need

Enough protein and greens for however many you're feeding, I cook for 2.

Main ingredients

  • Cod, one large piece or individual fillets
  • Onion, 1x large
  • Cream, about 200ml
  • Grated cheese for topping

Fresh/ frozen

  • Fresh dill, or 1 tsp dried
  • Broccoli and/ or green beans

Store cupboard

  • Olive oil
  • Salt & pepper, to taste

What to do

1. Slowly caramelise a finely sliced large onion in a dash of olive oil and a knob of butter. This takes around 15-20 minutes on a medium heat. If you're using dried herbs (dill or thyme work nicely) add them now.

2. Add the fish, about 200-250ml of cream (single or double it doesn't matter), fresh herbs and grate some hard cheese over the top - whatever you have, Gruyere is nice. Add some salt & pepper and bake in the oven until cooked through.

3. While it's cooking prep a side of your favourite greens. I used green beans and broccoli.

4. Time to plate up!

Slowly caramelise the onion, 20 mins

Add cod, cream, herbs & cheese

Bake for about 20 mins, 180 fan

notes & tips

  • 63 degrees this is the temperature at which cod fillet is cooked. Insert a food thermometer into the thickest part of the fish, if it's at 63 degrees it's cooked and can be left to rest.
  • use your favourite herbs & white fish. I used fresh dill as I bought a large bunch at the beginning of the week that's still going strong! Thyme is great with this too. I had some cod in the freezer but any white fish would work well.
  • cheese any hard cheese will be nice - parmesan, pecorino, cheddar or a mix! I usually have a cheese like comté or gruyère in the fridge specifically for this dish as it's so nice, and it lasts for ages!
  • cream add a dash more after cooking to loosen the sauce if needed.
