Pancakes, definitely not just for pancake day – they’re way too good for that – for ANY day, surely? Here at Purition HQ we just love a pancake and this recipe is a real winner! It makes a delicious breakfast, lunch, brunch or even dessert… It’s quick, easy and serves 3.
50g Purition – we used Macadamia & Vanilla
1 cup/ 100g Self raising Flour
2 cups/ 360g Full fat Greek Yoghurt
2 medium Eggs
1 teaspoon Bicarbonate of soda
1 teaspoon Baking Powder
1 teaspoon Vanilla Extract
A splash of Whole Milk to loosen the mixture – if required
Whisk all ingredients in a large bowl and allow to sit for 15 minutes.
On a medium heat, melt a little butter or coconut oil in a non-stick frying pan and add blobs of pancake mix, ours were about 10-12cm across.
When the surface of the pancake starts to bubble, flip and cook through.
The choice is yours… and possibilities endless! We like simple berries, a squeeze of lemon and a drizzle of honey or maple syrup – a dollop of cream would be good too!
