Oat ’n’ Raisin Cookies

Love baking? Well so do we! In the Purition office we also like to experiment with our baking, creating recipes which sometimes work...and sometimes don’t. This recipe however definitely works, and with the twist of the coconut oil it proved a hit with the rest of the staff. Avoiding sugar and butter, this recipe contains good wholesome ingredients which, when combined together, creates something you will be sure to enjoy. Let’s face it, who doesn’t love a classic oat ‘n’ raisin cookie?!

To make these yummy cookies just follow the recipe below.

Pro tip: If you wanted to add an extra taste of coconut simply exchange the mac and vanilla Purition protein powder for our coconut protein powder.
You will need:

  • 100g oats
  • 4x 10g scoops of Purition macadamia & vanilla protein powder
  • 5 prunes, blended to a paste (alternatively you could add one more tbsp of peanut butter)
  • 2 tbsp honey
  • 1 tbsp peanut butter
  • 2 tbsp coconut oil (melted)
  • 2 tbsp raisins

How to make:
Preheat the oven to 370F/190C/180C fan and line a baking tray.

In a bowl, stir the oats and Purition powder together until evenly combined.

In a separate larger bowl, add the prunes, peanut butter and honey and mix well to form a paste.

Slowly add the oats and Purition into the paste, stirring until it is well distributed amongst the oats.

Next add in the raisins, making sure they are evenly spread throughout the mixture.

Slowly add the melted coconut oil into the mixture and stir until all is well combined and the mix begins to come together, you may wish to add a drop of mix if the mixture seems too dry.

Using an ice cream scoop or large table spoon, spoon out the mix onto the sheet, pressing down to from circular cookies about 1cm in thickness, 6cm in diameter.

Bake on a middle shelf for 15-20 mins, or until staring to brown on the edges and underneath.
