Chia Pudding

Here in the Purition office we all do our best to eat well, but we know it is not always easy with bad temptations lurking around every corner. We all like, and need, to enjoy a little bit of indulgence, but sometimes it isn’t worth the cost of compromising on good, whole food ingredients. That is why we have put together a very simple, easy, chia pudding recipe for you to feel good about but most importantly enjoy eating.

Remember, although quick to make this pudding takes at least for hours to set, so it may be best to make the night before if having for breakfast, or early in the day if enjoying as a dessert. This is also a vegan friendly recipe, but if you prefer to use dairy or other ingredients we encourage you to experiment (so long as you don’t add anything nasty or artificial).

Ingredients
Koko coconut milk: 150ml
Whole chia seeds: 2 Purition scoops (28g)
Maple syrup: 1/2 tbsp
Vanilla extract: a drop or two

How to make
Add the chia seeds, maple syrup, vanilla to the milk and stir well. Leave to set for 4 hours (or overnight).

To Serve
Spoon into 2 serving dishes, top with cinnamon or berries and enjoy!
